Importation

Flour is a powder produced from grains of starchy plants mostly wheat.  Other starchy plants which flour could be made from are barley, buckwheat, corn, Lima beans, oats, peanuts, potatoes, cassava, yam, plantain, soybeans, rye, rice and many more.  Wheat is, however, the most cherished when it comes to raw materials for making all purpose flour.

Unfortunately, Nigeria still relies heavily on import for most of her wheat needs. This implies that the current exchange rate of the US dollar, which is the preferred currency for imports, will significantly influence prices.

Nigeria’s domestic wheat production hovers around 125,000 tons, creating a disproportionately huge gap from the 5.6 million tons annual demand.

This huge market gap is filled by costly wheat import which in turn shoots up the price of flour in the country.  Currently, Nigeria imports a total of 4.4 million metric tons of wheat at an average market price of $211.45 per ton.

 

Dangote Flour in Nigeria

Summary on Flour

There are different varieties of wheat used for making flour in Nigeria. Generally, wheat is considered to be either hard (i.e containing between 11 and 18% protein) or soft (i.e containing between 8 and 11% protein).

In most cases, flour produced for baking bread uses hard wheat. Hard wheat usually packs a very high amount of protein, which means the dough will have more “gluten”. For bakers, wheat with a high amount of gluten is cherished as it ensures the flour rises when used in baking.

Similarly, flour meant for baking cakes and pastry are usually made from soft wheat which contains a less amount of gluten.  For flour products made for multiple purpose use, a blend of soft and hard wheat is used. Products like Honeywell semolina (which is often used to make pasta) are made from a special variety of wheat called Durum.

Almost all flour brands in Nigeria usually contain little amount of additives.

Benzoyl peroxide – a bleaching agent – is added to make the flour more white. Improvers (also known as oxidizing agents) such as chlorine dioxide, potassium bromate, and azodicarbonamide are all forms of additives used to enhance the baking quality of milled flour. To guard against toxicity, these additives are added in few parts per million.

Leavening agents like calcium phosphate are used to enhance the self-rising quality of flour products. This is the kind that is used to make baked goods without the need to add yeast or baking powder.
